
I like that this recipe is really easy and it’s quite flexible. Although it’s ready pretty much as soon as you finish kneading, or if time allows, after resting, you can leave it on the worktop to rest for as much as 6 to 8 hours. I tried it once (made it for lunch but had it for dinner instead) and the pizza baked perfectly.
Can you freeze this pizza dough?
Yes you can! You can keep it in the freezer for use another time after Step 3.
Ingredients
Makes 2 small pizzas
300 g strong white bread flour
1 teaspoon fast action yeast
1 teaspoon salt
1 teaspoon olive oil
200 ml warm water
Method
- Put flour in a large bowl together with the yeast and salt, mix well. Pour in the water and olive oil, stir everything together with a wooden spoon or silicone spatula, the dough should be quite wet at this point. tip it onto a floured surface and knead for about 5 minutes. Add tiny bit more flour if needed but don’t add too much.
- You can proceed with the next steps right away but ideally put the dough back in the bowl and cover with a damp tea towel, let it rest for 15-30 mins. The dough will taste noticeably different!
- Divide the dough into two equal portions. Start with the first dough and keep the second one in the bowl, covered with the damp tea towel until you are ready to make it.
- Press the dough down from the centre towards the edges. This will move the air from the middle of the dough to the edges where it will form a crust. Be careful not to press the edge of the dough down, otherwise there won’t be a risen crust. Keep turning the dough as you work the air towards the edges. You should start forming a small pizza shape at this stage. Make sure the work surface is generously floured or the dough will start to stick.
- Keep turning and stretching the dough until the base can’t go any thinner and you have a crust the size you want. Now the pizza base is ready for your pizza sauce and toppings!

To cook the pizza in the Ninja woodfire pizza oven, use either the artisan pizza style or the New York style.
To cook the pizza in your kitchen oven, use the highest temperature to cook it for 8-10 minutes.
