
A Sunday roast chicken is a classic, comforting dish. There’s nothing quite like the smell of a roasting chicken wafting through your home. The crispy skin, juicy meat, and the warm, satisfying feeling it brings make it a perfect for a cozy Sunday dinner. And you can use the leftovers for sandwiches or a chicken pie, loads of options!
Ingredients
Medium whole chicken, about 1.6kg
1 teaspoon smoked paprika
1 teaspoon onion granules
1 teaspoon garlic granules
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon dried parsley
1 teaspoon dried sage
1 teaspoon dried thyme
2 teaspoons olive oil
1 bulb of garlic
Method
- In a small bowl, mix all the seasoning ingredients together.
- Rub seasoning all over chicken, then ideally leave to marinade for 30 mins or longer.
- Preheat oven to 200°C.
- Put a bulb of garlic into the cavity and roast in the oven for 1 hour 20 minutes, basting halfway.
- Rest the chicken for 10 minutes before carving.
