I’ve been craving something like a noodle bowl lately, so I decided to make one with aubergine and beef mince, using just one key ingredient: soy sauce. I just made this sauce up, but it was very delicious. I also got some leftover rice in the fridge, so I decided to make a rice bowl as well. We both prefer the rice bowl over noodles.

Ingredients
Beef mince
Aubergine, cut into bite-size chunks
Red onion, thinly sliced
Spring onion, chopped
Red chilli, chopped
Sauce
3 tbsp light soy sauce
1 tbsp Shaoxing rice wine
½ tbsp sugar
½ tbsp plain flour
Method
- In a small bowl, mix all the sauce ingredients.
- Heat oil in a pan, add red onion, cook until fragrant.
- Add the aubergine and a splash of water, cook until aubergine softens.
- Add beef mince, stir fry until beef is cooked.
- Add chilli and the sauce ingredients, mix well.
- If the sauce is too dry or not enough for the noodles/rice, add another splash of water and cook for a couple of minutes.
- Garnish with spring onion before serving.
