
Ingredients
2 slices of sourdough or other crusty bread, toasted and buttered
1 tablespoon olive oil
160g mushrooms, sliced
2-3 tablespoons double cream
Stilton cheese to taste, crumbled
Handful of fresh parsley or basil leaves
Salt and pepper to taste
Method
- Heat 1 tablespoon of olive oil in a frying pan on medium heat.
- Add the mushrooms, stirring frequently for about 5 minutes until mushrooms start to brown and the liquid has dried. Stir in the cream and crumbled stilton. season with salt and pepper to taste.
- Stir in the parsley and serve on thick slices of buttered toast.
