Roasted Tomato Soup With Thyme

Ingredients

Makes 2 starter-sized soups

8 tomatoes, halved
2-3 cloves of garlic, sliced
1 onion, roughly chopped
Fresh thyme
Salt and pepper, to taste
2-3 tablespoon olive oil
250 ml chicken stock
1-2 tablespoon double cream
A drizzle of Worcestershire sauce

Method

  1. Preheat oven to 180°C fan.
  2. Put tomatoes, garlic slices, onion and thyme on a baking tray, season with salt and pepper. Drizzle with olive oil and bake for 40-50 minutes. Remove the tray from the oven and set aside to cool down.
  3. In a saucepan, add stock and the roasted ingredients from the tray. Blend with a hand blender until you have the desired consistency, then bring to a simmer.
  4. Add cream and Worcestershire sauce, season to taste.
  5. Garnish with a swirl of cream, olive oil, and a sprig of thyme. Serve with a slice of bread.
